From The Feild To The Sack
Our Lavagrano is not just any ordinary washing machine; it’s a specialized machine used for cleaning the grain. It consists of a closed tank in which augers of different sizes advance the grain under jets of water. The “dirty” water is conveyed to the activated sludge plant, which purifies it. The purified water is then returned to the aquifer (surface water body), and the sludge is collected and disposed of by a special authorized company.
Higher Flours
Our Lavagrano machine allows us to absorb the right amount of water that the grains require to be softer and ready for the milling phase. By grinding every single variety of wheat in purity, the washing machine enables the kernel to soften properly, facilitating decortication and correct breaking of the grain during the grinding phase. Only by nebulizing the grain with water, not all varieties would receive the right amount of water, and this would not allow the kernel to soften properly. The grain would peel less easily, and there would not be a correct division of all the parts that characterize it (bran, middlings, trite, germ, etc.). As a result, we’re able to make superior flours that are unlike any other on the market.

We keep color and scent
Another peculiarity of the Lavagrano is the color of the flour obtained. Our flours, thanks to the combination of washing the grain and slow and cold grinding, are whiter, and their aroma will be typical of wheat. In fact, when the bag is opened, the color of the flour will not tend to gray but will be white, and the scent will not smell like the paper bag but will smell like Buon Grano.
